Din Tai Fung

Very light and qingqing (青青), not especially oily, but has no wok hei flavour.

For this review, I ate at Din Tai Fung’s Jewel Changi Airport location on a Saturday evening. Considering how busy Jewel can get, particularly on weekends, there was only a 15-minute wait to be seated. You can join an online queue by scanning a QR code at the front of the restaurant, leaving your phone number, and you’ll receive a phone call (from a robot) letting you know when your table is ready. Tables are saved for you for 10 minutes from this point, but as long as you don’t wander too far away (or get lost!) you won’t have any issues.

Din Tai Fung makes a respectable fried rice; although, you don’t typically go to Din Tai Fung for the rice, you go for the Xiao Long Bao (小笼包), or soup dumplings. I highly recommend you try them.

I opted for the Fried Rice with Pork Chop menu item, which comes with an excellent piece of sliced breaded pork on top, but you can also get it with Shrimp, Shredded Pork, or just the fried rice on its own.

As far as ingredients goes, you’re looking at a healthy portion of egg and green onion in the fried rice, and the pork slice is also delicious. An option with a mix of both pork and shrimp would take this dish up a notch. But if you’re looking for the deep, rich flavour that you can find with fried rice, you won’t find it here. Although there is essentially no wok hei flavour, Din Tai Fung’s fried rice is extremely light, and as a result of it not being fried, is not very oily at all and makes it easy to eat a lot of. But make sure you save room for the soup dumplings!
